The counterpoint of my white wine assortment. The 50-year-old Pinot Blanc vines also root on a limestone base, but beneath this is a slab of schist that lends the wine its unique, pronounced fruit character. The vineyard parcels are also exposed to steady winds from the north that lend cool minerality and plenty of crisp freshness and vitality. The maceration period provides additional complexity, while maturation in 500-litre barrels allows subtle exposure to air, which enhances the deep and concentrated texture. Fruit opens on the nose and palate to reveal plenty of apricot, peach and almond.
